Cook the Bacon or Chorizo
If using bacon, preheat your oven to 200°C (400°F). Lay the bacon strips on a baking tray and cook for about 15-20 minutes until crispy. Remove from oven, drain on paper towels, and chop into small pieces. If using chorizo, heat a skillet over medium heat and cook the chorizo for about 5-7 minutes until browned and crispy. Drain excess fat if necessary.

Layer the Nachos
On a large oven-proof platter or baking sheet, spread out the tortilla chips evenly. Sprinkle half of the shredded cheese over the chips.

Add Toppings
Distribute the cooked bacon or chorizo evenly over the cheese layer. Add sliced jalapeños, and then top with the remaining cheese.

Bake the Nachos
Place the assembled nachos in the preheated oven and bake for about 10 minutes or until the cheese is melted and bubbly.

Garnish and Serve
Remove the nachos from the oven and let them cool slightly. Top with dollops of sour cream and guacamole, and sprinkle with chopped cilantro. Serve immediately.
