Prepare the Proteins
Slice the steak and chicken breast into thin strips. Season both with salt, black pepper, cumin, and garlic powder. Allow them to marinate for at least 15 minutes.

Cook the Proteins
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated steak and chicken strips. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the onions, bell peppers, and mushrooms. Sauté until softened and caramelized, about 5 minutes. Add the tomatoes and stir for an additional 2 minutes.

Assemble the Quesadilla
On one half of each tortilla, layer shredded cheese, the cooked proteins, and sautéed vegetables. Fold the tortilla over to cover the filling.

Cook the Quesadilla
Wipe the skillet clean and return it to medium heat. Cook each quesadilla for about 3-4 minutes on each side, until golden brown and the cheese is melted.

Cut the quesadillas into wedges and serve with a dollop of sour cream and fresh cilantro on top.
