Cheese Quesadilla

    Prepare Quesadillas

    Heat olive oil in a skillet over medium heat. Place one tortilla in the skillet, sprinkle half of the cheese on top, and cover with another tortilla. Cook until golden brown, about 2-3 minutes on each side. Remove and slice into wedges.

Mini Taquitos

    Make the Filling

    In a bowl, mix the cooked shredded chicken with taco seasoning and Mexican cheese blend.

    Assemble Taquitos

    Warm corn tortillas in a microwave for 30 seconds. Place a small amount of the filling on each tortilla and roll tightly. Secure with a toothpick if necessary.

    Fry Taquitos

    Heat vegetable oil in a deep pan over medium-high heat. Fry taquitos until golden and crispy, about 3-4 minutes. Drain on paper towels.

Mini Chimichangas

    Prepare Filling

    In a bowl, combine cooked beef or chicken, refried beans, and shredded cheese.

    Assemble Chimichangas

    Place a portion of the filling in the center of each tortilla, fold in the sides, and roll tightly. Secure with a toothpick if necessary.

    Heat vegetable oil in a deep pan over medium-high heat. Fry chimichangas until golden brown and crispy, about 4-5 minutes. Drain on paper towels.

Stuffed Jalapeños

    Preheat the oven to 375°F (190°C). Halve the jalapeños and remove the seeds.

    In a bowl, mix cream cheese, shredded cheese, and crumbled bacon until well combined.
