Prepare the Fries
Peel the potatoes and cut them into fry shapes. Rinse in cold water to remove excess starch.

Fry the Potatoes
In a large pot, heat vegetable oil over medium-high heat. Once hot, add the fries in batches and fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.

Prepare the Branzino
Preheat the oven to 400°F (200°C). Rinse the branzino under cold water and pat dry with paper towels. Season the inside and outside with salt and black pepper.

Stuff and Drizzle
Stuff the cavity of the branzino with lemon slices and fresh parsley. Drizzle olive oil over the fish.

Bake the Fish
Place the branzino on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.

Serve
Arrange the French fries on a serving platter and place the baked branzino on top. Garnish with additional parsley and lemon slices if desired.
