Prepare the Beans

Soak the giant white beans in water for at least 8 hours or overnight. Drain and rinse before using.

In a large oven-safe pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

Add Tomatoes and Beans

Add the canned diced tomatoes (with their juices), vegetable broth, soaked giant beans, bay leaves, dried thyme, salt, and black pepper. Stir to combine.

Bake the Mixture

Bring the mixture to a simmer. Once simmering, cover the pot and transfer it to a preheated oven at 350°F (175°C). Bake for 1 hour.

After 1 hour, remove the pot from the oven. Check the beans for tenderness; if they need more time, return to the oven for an additional 15-30 minutes. Once done, remove bay leaves, sprinkle with chopped parsley, and serve warm.
