    Marinate the Pork

    In a large bowl, combine olive oil, minced garlic, dried oregano, ground cumin, paprika, salt, and black pepper. Add the pork shoulder and coat it evenly. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat your grill or oven to medium-high heat. Remove the pork from the marinade and cook for about 25-30 minutes, turning occasionally, until it reaches an internal temperature of 145°F (63°C). Let it rest for 10 minutes before slicing.

    Prepare the Pita

    While the pork is resting, warm the pita bread on the grill or in the oven for about 2-3 minutes until soft.

    Assemble the Gyro

    Slice the rested pork into thin strips. Place the sliced pork in the warm pita bread, add diced tomatoes, sliced red onion, diced cucumber, and a generous dollop of tzatziki sauce.
