    Prepare the Pasta

    In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside.

    Grill the Shrimp

    In a grill pan over medium-high heat, toss the shrimp with 1 tablespoon of olive oil, salt, and black pepper. Grill for 2-3 minutes on each side until cooked through. Remove and set aside.

    Blister the Tomatoes

    In the same grill pan, add the halved heirloom tomatoes and cook for about 4-5 minutes until they are blistered and slightly charred. Remove and set aside.

    Make the Lemon Garlic Cream

    In a saucepan over medium heat, add the remaining olive oil and minced garlic. Sauté until fragrant, about 1 minute. Add the heavy cream and lemon juice, stirring to combine. Let simmer for 3-4 minutes until slightly thickened. Season with salt and pepper to taste.

    Combine and Serve

    In a large bowl, combine the cooked linguine, grilled shrimp, blistered tomatoes, and fresh spinach. Pour the lemon garlic cream over the top and toss to combine. Serve warm, garnished with grated Parmesan cheese.
