Method

Brining the Chicken

    Prepare the Brine

    In a large bowl, mix buttermilk and hot sauce. Add chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, or overnight.

    Prepare the Breading

    In a separate shallow dish, mix flour, cornstarch, salt, black pepper, garlic powder, and onion powder.

Cooking the Chicken

    Heat the Oil

    In a large heavy-bottomed pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Bread the Chicken

    Remove chicken from brine, allowing excess to drip off. Dredge in the flour mixture, shaking off the excess.

    Fry the Chicken

    Carefully place breaded chicken thighs into the hot oil. Fry for approximately 7-10 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Making the Roasted Garlic Mashed Potatoes

    Peel and chop potatoes into quarters. Boil in salted water until fork-tender, about 15-20 minutes.

    Drain potatoes and return to pot. Add butter, heavy cream, roasted garlic (squeeze out the cloves), salt, and black pepper. Mash until smooth and creamy.

    In the same pan used for frying chicken, whisk together chicken drippings and flour over medium heat until smooth. Gradually add chicken broth, stirring until thickened. Season with salt and pepper.

Making the Sweet and Spicy Slaw

    In a large bowl, combine shredded cabbage and carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, sriracha, and salt. Pour dressing over slaw and toss to combine.
