Prepare the Remoulade
In a bowl, combine mayonnaise, Dijon mustard, capers, hot sauce, lemon juice, salt, and pepper. Mix well and set aside.

Season the Shrimp
In a large bowl, toss the shrimp with Cajun seasoning until evenly coated.

Prepare the Breading
In a shallow dish, mix together the flour and cornmeal. In another dish, pour the buttermilk.

Bread the Shrimp
Dip each shrimp first into the buttermilk, then coat with the flour-cornmeal mixture, pressing to adhere.

Fry the Shrimp
Heat vegetable oil in a large frying pan over medium-high heat. Once hot, fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels.

Assemble the Po’ Boys
Slice the Gaston’s rolls in half. Spread a generous amount of the remoulade on both sides. Layer with shredded lettuce, tomato slices, and fried shrimp. Close the sandwich and serve immediately.
