Ingredients for Roasted Portobello

Method

Directions for Roasted Portobello

  1. 1

    Prepare the Marinade

In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and black pepper.

  2. 2

    Marinate the Mushrooms

Place Portobello mushrooms in a shallow dish and pour the balsamic marinade over them. Let them marinate for at least 30 minutes, turning occasionally.

  3. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  4. 4

    Roast the Mushrooms

Arrange the marinated Portobello mushrooms on a baking sheet, gill side up. Roast in the preheated oven for 15-20 minutes.

  5. 5

    Add Toppings

Remove the mushrooms from the oven, spread a generous amount of pesto sauce on each mushroom, top with sliced tomatoes, and sprinkle with Fontina cheese.

  6. 6

    Final Bake

Return the mushrooms to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  7. 7

    Serve

Serve the roasted Portobello mushrooms on slices of Tuscan loaf, garnished with additional pesto if desired.
