    Prepare the Rub

    In a small bowl, combine brown sugar, coffee grounds, paprika, salt, and black pepper. Mix well.

    Prep the Steak

    Pat the flat iron steak dry with paper towels. Rub the brown sugar coffee mixture evenly over the steak and let it sit at room temperature for 30 minutes.

    Prepare the Citrus Butter

    In a small bowl, blend the unsalted butter with lemon juice, lemon zest, and orange zest until smooth. Set aside.

    Prepare the Fingerlings

    Preheat the oven to 400°F (200°C). Toss fingerling potatoes with olive oil, salt, and pepper. Spread out on a baking sheet and roast for 25-30 minutes or until golden and tender.

Cooking

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Let rest for 5 minutes before slicing.

    Sauté the Vegetable

    In a pan, sauté today's vegetable in a little olive oil over medium heat until tender, about 5-7 minutes.

    Serve

    Slice the steak against the grain and serve with citrus butter on top, alongside roasted fingerlings and sautéed vegetables.
