Cook the Pasta
In a large pot, bring salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente. Drain and set aside.

Add Cheese and Chiles
Remove the skillet from heat and stir in the shredded Tillamook sharp white cheddar cheese and diced hatch green chiles until the cheese is melted and the mixture is creamy. Season with salt and black pepper to taste.

Combine Pasta and Sauce
Add the cooked cavatappi pasta to the cheese sauce and stir until well combined. If the mixture is too thick, add a splash of milk to loosen it.

Top with Dorito Dust
Sprinkle the Dorito dust evenly over the mac and cheese. Optionally, add some extra shredded cheese on top for a cheesy crust.

Preheat the oven to 350°F (175°C). Place the cast iron skillet in the oven and bake for 15-20 minutes or until the top is golden brown and bubbly.
