Preparation

    Prepare the Potato

    Peel and dice the potato into small cubes. Boil in salted water for about 10-15 minutes until fork-tender. Drain and set aside.

    Cook the Meats

    In a skillet over medium heat, cook the bacon until crispy. Remove and set aside. In the same skillet, cook the sausage until browned, about 5-7 minutes. Remove and set aside.

    Prepare the Salad

    In a bowl, combine mixed greens, sliced cherry tomatoes, and diced cucumber. Drizzle with olive oil and balsamic vinegar, and season with salt and pepper. Toss gently.

    Toast the Bread

    Toast the sourdough slices until golden brown.

Egg Cooking

    Poaching or Scrambling Eggs

    For poached eggs, bring a pot of water to a simmer, add a splash of vinegar, and gently crack in the eggs. Cook for 3-4 minutes until the white is set. For scrambled eggs, whisk the eggs in a bowl and cook in the same skillet used for meats, stirring gently until just set.

    On a plate, arrange the cooked bacon, sausage, potatoes, and salad. Top with poached or scrambled eggs, and serve with the toasted sourdough on the side.
