Braised Beef Preparation

Sear the Beef
In a large pot, heat a tablespoon of butter over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the beef on all sides until browned, about 4-5 minutes per side.

Braise the Beef
Once browned, add the beef broth to the pot, cover, and reduce the heat to low. Allow the beef to braise for about 3 hours or until tender, turning occasionally.

Caramelize the Onion
In a skillet, melt the remaining tablespoon of butter over medium heat. Add the sliced onion and cook until caramelized, about 15-20 minutes. Set aside.

Prepare the Sandwich
Once the beef is tender, shred it with two forks and mix it with the horseradish sauce and grainy Dijon mustard. On one slice of sourdough bread, layer the shredded beef, sauerkraut, caramelized onions, smoked scamorza, and white cheddar.
