Preparation

    Cook the Steak

    Season the flat iron steak with salt and pepper. Heat a grill or skillet over medium-high heat and cook the steak for about 4-5 minutes on each side for medium-rare. Remove from heat and let it rest.

    Prepare the Egg

    In the same skillet, reduce the heat to medium and add a little oil if needed. Crack the egg into the skillet and cook sunny side up for about 3-4 minutes, or until the whites are set but the yolk is still runny.

    Roast the Tomato

    Slice the tomato in half and roast it in the oven at 400°F (200°C) for about 10-15 minutes until softened and slightly caramelized.

    Prepare the Potatoes

    Fry or bake the matchstick potatoes until they are golden and crispy. Season with salt to taste.

    Assemble the Sandwich

    Spread the garlic aioli on the bottom half of the sesame pretzel bun. Add the cooked flat iron steak, spoon on the garlic scape relish, place the roasted tomato, and top with the sunny side up egg. Add the matchstick potatoes on the side and close the sandwich with the top bun.
