Method

Preparation of Gnocchi

    Make the dough

    Boil the potatoes until tender. Allow them to cool slightly, then peel and mash. In a bowl, combine mashed potatoes, flour, egg, and salt. Mix until a dough forms, then knead gently on a floured surface.

    Shape the gnocchi

    Divide the dough into smaller pieces and roll each piece into a rope about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges.

    Cook the gnocchi

    Bring a pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Making Tomato Conserva

    Cook the tomatoes

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add canned tomatoes, salt, and sugar. Simmer for 20-25 minutes until thickened. Stir in fresh basil before serving.

Roasting Maitake Mushrooms

    Prepare the mushrooms

    Heat olive oil in a skillet over medium-high heat. Add maitake mushrooms, salt, and pepper. Sauté until golden brown and tender, about 5-7 minutes.

Plating

    Assemble the dish

    On a plate, create a base with tomato conserva, arrange gnocchi on top, and garnish with roasted maitakes, halved cherry tomatoes, stracciatella, fresh basil, chopped pistachios, and drizzle with smoked squash crema. Finish with a sprinkle of fennel pollen.
