Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form a crust.

Bake the Crust
Bake the crust in the preheated oven for 8-10 minutes until golden. Remove from the oven and let it cool.

Make the Cheesecake Filling
In a large bowl, beat the softened cream cheese until smooth. Gradually add in sugar and continue to beat until creamy. Mix in sour cream and vanilla extract until well combined. Add eggs one at a time, mixing on low speed until just combined.

Bake the Cheesecake
Pour the cheesecake batter over the cooled crust. Bake in the oven at 325°F (160°C) for about 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven, crack the door and let the cheesecake cool in the oven for 1 hour.

Cool and Chill
Remove the cheesecake from the oven and let it cool at room temperature for another hour. Refrigerate for at least 4 hours or overnight.

Slice the chilled cheesecake and serve with blueberry compote on top.
