Pork Belly

Method

Pork Belly

1

Prepare the Pork Belly

Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Season generously with salt, black pepper, garlic powder, and five-spice powder.

2

Roast the Pork Belly

Heat vegetable oil in a large oven-safe skillet over medium-high heat. Sear the pork belly skin-side down until golden brown, about 5-7 minutes. Flip and transfer the skillet to the oven. Roast for 2 to 2.5 hours, until the meat is tender and the skin is crispy.

Apple & Parsnip Puree

3

Cook the Apples and Parsnips

In a medium saucepan, combine the chopped apples, parsnips, butter, salt, pepper, and water. Bring to a boil, then reduce heat and simmer until the apples and parsnips are tender, about 15-20 minutes.

4

Blend the Puree

Using an immersion blender or a regular blender, puree the mixture until smooth. Adjust seasoning if necessary.

Asian BBQ Sauce

5

Make the Sauce

In a small saucepan, combine soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic. Bring to a simmer over medium heat and cook for 5-7 minutes until slightly thickened.

Cabbage Slaw

6

Prepare the Slaw

In a large bowl, combine shredded cabbage and carrot. In a separate bowl, whisk together rice vinegar, sugar, salt, and pepper. Pour over the cabbage mixture and toss to coat. Sprinkle with sesame seeds before serving.
