Prepare the Broth
In a pot, heat the vegetable broth over medium heat until it's simmering. Keep it warm throughout the cooking process.

Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

Add the Rice
Stir in the Arborio rice, allowing it to toast for 2 minutes until slightly translucent.

Add the Broth Gradually
Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the rice absorbs most of the liquid before adding more. Continue this process for about 18-20 minutes, until the rice is al dente and creamy.

Finish the Risotto
Stir in the grated Parmigiano-Reggiano cheese and chopped fresh herbs. Season with salt and black pepper to taste.

Plate the risotto and garnish with the reserved sautéed maitake mushrooms and additional fresh herbs if desired.
