    Roast Garlic

    Preheat the oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft. Let cool, then squeeze the cloves out into a bowl.

    Prepare Bechamel Sauce

    In a saucepan, melt the butter over medium heat. Add the flour and whisk for 1-2 minutes until lightly golden. Gradually add the milk, whisking continuously until the sauce thickens (about 5-7 minutes). Stir in the roasted garlic, salt, and black pepper. Remove from heat and set aside.

    Grill Maitake Mushrooms

    Heat a grill pan over medium-high heat. Toss the maitake mushrooms with olive oil, salt, and pepper. Grill for about 5-7 minutes until golden and tender. Remove from heat and set aside.

    Assemble Flatbread

    Preheat the oven to 375°F (190°C). On each piece of flatbread, spread a generous layer of the bechamel sauce. Top with grilled maitake mushrooms and shredded provolone cheese.

    Bake

    Place the assembled flatbreads on a baking sheet and bake for 10-12 minutes until the cheese is melted and bubbly.

    Serve

    Remove from the oven, garnish with chopped fresh parsley, slice, and serve warm.
