Prepare the Patties
In a bowl, season the ground beef with salt and black pepper. Form into two equal patties.

Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

Cook the Patties
In the same skillet, add the beef patties and cook for about 4-5 minutes on each side for medium doneness. Add the Cooper sharp cheese on top of the patties during the last minute of cooking to melt.

Toast the Rolls
While the patties are cooking, slice the brioche rolls in half and toast them lightly on a separate skillet or in a toaster.

Assemble the Burger
On the bottom half of each toasted brioche roll, layer romaine lettuce, a slice of beefsteak tomato, the cooked beef patty with melted cheese, and two slices of bacon. Top with the other half of the roll.

Serve
Serve the burgers immediately while hot.
