    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked fries and pat them dry. Carefully add them to the hot oil in batches and fry until golden brown and crispy, about 4-5 minutes per batch.

    Drain and Season

    Remove the fries from the oil and place them on paper towels to drain excess oil. Season with salt and black pepper to taste.

    Make the Aioli

    In a small bowl, combine mayonnaise, minced garlic, lemon juice, olive oil, and salt. Mix until smooth and well blended.
