Prepare the Chicken
Preheat a skillet over medium-high heat. Coat the chicken breasts with olive oil and season generously with blackening seasoning, salt, and black pepper.

Cook the Chicken
Place the seasoned chicken breasts in the hot skillet and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let rest for a few minutes before slicing.

Cook the Bacon
In the same skillet, add the bacon slices and cook until crispy. Remove and drain on paper towels.

Toast the Challah
In the same skillet, toast the challah slices until golden brown on both sides.

Assemble the BLT
Spread mayonnaise on one side of each toasted challah slice. On one slice, layer sliced blackened chicken, romaine lettuce, tomato slices, and crispy bacon. Top with another slice of challah, mayo side down.

Serve
Cut the sandwich in half and serve immediately with your favorite side.
