Method
Preparation of Chips
Make the Tortilla Chips
Cut the corn tortillas into quarters to form triangles. Heat the vegetable oil in a large pot over medium heat. Once hot, carefully add the tortilla triangles in batches and fry until golden brown and crispy. Remove from oil and drain on paper towels. Season with salt to taste.
Assembly of Nachos
Layer the Nachos
Preheat your oven to 350°F (175°C). On a large baking sheet, spread the fried tortilla chips evenly. Sprinkle the cheddar and jack cheese over the chips. Add the black beans evenly over the cheese. Place in the oven and bake for 10-15 minutes or until the cheese is melted and bubbly.
Garnish and Serve
Remove the nachos from the oven and top with shredded lettuce, pico de gallo, and dollops of sour cream. Serve immediately and enjoy!
