Brewing Process

1. Mashing

Heat 3 gallons of water to 165°F (74°C) and add the crushed Pale Malt and Crystal Malt. Maintain the temperature at 150°F (65°C) for 60 minutes.

2. Lautering

After mashing, sparge with 2 gallons of hot water to rinse the sugars from the grains.

3. Boiling

Bring the wort to a boil and add the hops according to the recipe for either Hoppy Poppy IPA (add Citra hops at the beginning and again at 15 minutes before the end) or Trumer Pils (add Hallertau hops at the beginning and at 10 minutes before the end). Boil for 60 minutes.

4. Cooling

Cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C) for Hoppy Poppy IPA or 55°F (13°C) for Trumer Pils.

5. Fermentation

Transfer the cooled wort to a sanitized fermenter, pitch the yeast, and seal with an airlock. Ferment for 1-2 weeks at the appropriate temperature for the chosen yeast.

6. Bottling

Once fermentation is complete, bottle the beer with priming sugar and let it carbonate for another 1-2 weeks.

7. Enjoy

Chill the bottles and serve your homemade DRAFT BEER!
