    Preheat oven

    Preheat your oven to 350°F (175°C).

    Mix dry ingredients

    In a large bowl, whisk together the flour, baking soda, baking powder, salt, instant coffee granules, cocoa powder, granulated sugar, and brown sugar until well combined.

    Cream butter and sugars

    In another bowl, cream the softened butter with the granulated and brown sugars until light and fluffy.

    Add wet ingredients

    Add the egg and vanilla extract to the butter mixture and mix until well combined.

    Combine mixtures

    Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.

    Add chocolate chips (optional)

    If desired, fold in the chocolate chips.

Baking

    Scoop dough

    Using a cookie scoop or tablespoon, drop dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
