Method
To Make Gnocchi
Make the Dough
In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms. If the dough is too sticky, add more flour as needed.
Shape the Gnocchi
Divide the dough into smaller pieces. Roll each piece into a long rope about 1/2 inch thick, then cut into 1-inch pieces. Use a fork to create ridges on each piece if desired.
Cook the Gnocchi
Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
To Make Beef Ragu
Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add chopped onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
Cook the Beef
Add ground beef to the skillet and cook until browned, breaking it apart with a spoon.
Add Tomatoes and Seasonings
Stir in crushed tomatoes, red wine, oregano, salt, and pepper. Bring to a simmer and reduce heat. Let it cook for 30-40 minutes, stirring occasionally.
Finish the Ragu
Stir in the fresh basil just before serving. Adjust seasoning to taste.
To Serve
Combine Gnocchi and Ragu
Toss the cooked gnocchi in the beef ragu until well coated. Serve hot, garnished with additional basil if desired.
