    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Mix well to combine.

    Add Wet Ingredients

    Add 2 large eggs and 1 tsp of vanilla extract to the dry ingredients. Mix until a dough forms.

    Shape the Dough

    Transfer the dough onto a floured surface and shape it into a log approximately 12 inches long and 2 inches wide.

    First Bake

    Place the log on a baking sheet lined with parchment paper and bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until golden brown.

    Cool and Slice

    Remove the log from the oven and let it cool for about 10 minutes. Once cooled, slice it into 1/2 inch thick pieces.

    Arrange the slices on the baking sheet and return to the oven. Bake for an additional 10-15 minutes, flipping halfway through, until the rusks are crisp and golden.
