Veal Preparation

    Prepare the Breading Station

    Set up a breading station with three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with breadcrumbs.

    Bread the Veal

    Dredge each veal scallopini first in the flour, then dip in the beaten eggs, and finally coat with breadcrumbs. Make sure they are well coated.

    Cook the Veal

    In a large skillet, heat olive oil over medium-high heat. Once hot, add breaded veal scallopini and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove and set aside.

Tomato Sauce

    Sauté Aromatics

    In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until onion is translucent.

    Add Tomatoes and Seasoning

    Stir in crushed tomatoes, oregano, basil, salt, pepper, and sugar. Bring to a simmer and let cook for about 15-20 minutes, stirring occasionally.

Assembly

    Prepare the Baguette

    Slice the baguette in half lengthwise and toast lightly in the oven or on a grill.

    Assemble the Sandwich

    Place the cooked veal scallopini on the bottom half of the baguette, spoon over the tomato sauce generously, and top with provolone cheese slices. Optionally, place back in the oven to melt the cheese.

    Serve

    Close the sandwich with the top half of the baguette, slice in half if desired, and serve hot.
