Calzone Dough

Method

Preparing the Dough

    Activate Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Dry Ingredients

    In a large mixing bowl, combine all-purpose flour and salt.

    Combine Ingredients

    Make a well in the center of the flour mix, add the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Preparing the Filling

    Cook Bacon

    In a skillet, cook the bacon until crispy. Remove from skillet and chop into pieces.

    Sauté Mushrooms

    In the same skillet, add sliced mushrooms and sauté until tender.

    Combine Filling Ingredients

    In a mixing bowl, combine pepperoni, crispy bacon, sautéed mushrooms, shredded mozzarella, Italian seasoning, and black pepper. Mix well.

Assembling and Baking the Calzone

    Preheat Oven

    Preheat your oven to 475°F (245°C).

    Shape the Calzone

    On a floured surface, roll out the dough into a large circle about 12 inches in diameter. Cut into two equal halves.

    Fill the Calzone

    Place half of the filling on one side of the dough, leaving a border. Fold the other half over the filling and crimp the edges to seal.

    Brush the top of the calzone with beaten egg and sprinkle grated Parmesan cheese over the top.
