Stone Fruit Syrup

To Serve

Method

Prepare the Tea Base

  1. 1

    Boil Water

In a large pot, bring 4 cups of water to a boil.

  2. 2

    Steep Tea

Once the water is boiling, remove it from heat and add the 4 black tea bags. Allow to steep for 5-7 minutes.

  3. 3

    Remove Tea Bags

After steeping, remove the tea bags and let the tea cool to room temperature.

Make Stone Fruit Syrup

  1. 4

    Combine Ingredients

In a saucepan, combine the sliced peaches, sliced plums, 1 cup of sugar, and 1 cup of water.

  2. 5

    Cook the Syrup

Bring the mixture to a boil over medium heat, stirring occasionally until the sugar is dissolved. Reduce heat and let it simmer for about 10 minutes.

  3. 6

    Strain the Syrup

Remove from heat and strain the syrup through a fine mesh sieve to remove the fruit solids. Allow the syrup to cool.

Assemble the Drink

  1. 7

    Combine Tea and Syrup

In a large pitcher, combine the cooled tea and the strained stone fruit syrup. Stir well to mix.

  2. 8

    Serve Over Ice

In glasses, place about 1 cup of ice cubes. Pour the stone fruit iced tea over the ice.

  3. 9

    Garnish

Garnish each glass with fresh mint leaves and a slice of lemon before serving.
