Prepare the Pasta

1. Boil Water

In a large pot, bring salted water to a boil.

2. Cook Spaghetti

Add the spaghetti to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

3. Drain

Once cooked, drain the spaghetti and set aside, reserving a cup of pasta water.

Sauté the Vegetables

4. Chop Vegetables

While the pasta is cooking, chop the zucchini, bell pepper, carrot, and garlic into bite-sized pieces.

5. Heat Olive Oil

In a large skillet, heat the olive oil over medium heat.

6. Sauté Vegetables

Add garlic, zucchini, bell pepper, and carrot to the skillet. Sauté for about 5-7 minutes until vegetables are tender.

7. Add Spinach and Tomatoes

Stir in the spinach and cherry tomatoes, cooking for an additional 2-3 minutes until the spinach wilts.

Combine and Serve

8. Mix with Pesto

Lower the heat and add the cooked spaghetti and pesto to the skillet. Toss to combine, adding reserved pasta water as needed to loosen the sauce.
