Method

Seafood Preparation

  1. 1

    Prepare the Seafood

In a medium bowl, combine shrimp, mussels, and scallops. Set aside.

Pasta Cooking

  1. 2

    Cook the Linguine

Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions until al dente. Drain and set aside.

Broth Creation

  1. 3

    Sauté the Aromatics

In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion. Sauté until onion is translucent, about 3-4 minutes.

  2. 4

    Add Tomatoes and Liquid

Stir in halved cherry tomatoes, fish stock, and white wine. Bring to a simmer, then season with salt and black pepper. Cook for about 5-7 minutes until the tomatoes soften.

  3. 5

    Add Seafood

Add the prepared seafood to the skillet. Cover and cook for another 5-7 minutes, or until the shrimp are pink, mussels have opened, and scallops are opaque.

  4. 6

    Finish the Broth

Stir in fresh parsley just before serving.

Garlic Homeloaf Preparation

  1. 7

    Prepare the Garlic Homeloaf

Preheat the oven to 180°C (350°F). In a small bowl, mix softened butter, garlic powder, and chopped parsley. Slice the French bread in half lengthwise and spread the mixture evenly on both halves.

  2. 8

    Bake the Bread

Place the bread on a baking sheet and bake for about 10-12 minutes, or until golden brown.

Optional Salad Preparation

  1. 9

    Toss the Salad

In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper. Toss gently to combine.

Serving

  1. 10

    Plate the Dish

Serve the seafood linguine in bowls, accompanied by garlic homeloaf and salad if desired.
