Method

Preparing the Scallops and Pasta

    Cook the linguine

    In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside.

    Wrap the scallops

    Wrap each scallop with a slice of bacon and secure with a toothpick. Set aside.

    Cook the scallops

    In a skillet over medium heat, cook the bacon-wrapped scallops for about 3-4 minutes on each side, or until the bacon is crispy and the scallops are opaque. Remove from heat and set aside.

Making the Alfredo Sauce

    Sauté garlic

    In the same skillet used for the scallops, add minced garlic and sauté for about 1 minute until fragrant.

    Prepare the sauce

    Add heavy cream to the skillet and bring to a simmer. Stir in the Parmesan cheese until melted and smooth. Remove from heat and whisk in the egg yolks until well combined.

Combining Everything

    Mix linguine and sauce

    In a large bowl, combine the cooked linguine and Alfredo sauce. Toss until the pasta is well coated.

    Add scallops

    Gently fold in the bacon-wrapped scallops and chopped green onions into the linguine mixture.

Serving the Dish

    Prepare the salad

    In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber. Dress with your choice of salad dressing.

    Toast the garlic bread

    Slice the garlic bread loaf in half and toast it in the oven until golden brown.

    Plate the dish

    Serve the scallop carbonara on plates, alongside the mixed greens salad and garlic bread.
