Prepare the Dough

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dough Ingredients

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.

    Knead the Dough

    Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Filling

    Mix Filling Ingredients

    In a mixing bowl, combine shredded mozzarella cheese, pepperoni slices, Italian seasoning, and grated Parmesan cheese. Mix well.

Assemble the Calzones

    Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

    Once the dough has risen, punch it down and divide it into 4 equal pieces.
