Chocolate Mousse

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave, stirring until smooth. Allow it to cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Set aside.

Combine Mixtures
Fold the melted chocolate into the whipped cream until well combined. Then gently fold in the beaten egg whites until no streaks remain.

Chill
Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.

Prepare the Cream Cheese Filling
In a bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until well combined.

Fill the Tart Shells
Spoon or pipe the cream cheese mixture into the mini tart shells, filling them generously.

Top with Fruit
Arrange the assorted fresh fruits on top of the cream cheese filling in each tart shell.

Chill
Refrigerate the fruit tarts for at least 30 minutes before serving to allow the filling to set.

Preheat the Oven
Preheat your oven to 160°C (320°F).

Mix the Cheesecake Filling
In a bowl, beat the cream cheese until smooth. Add sugar, vanilla extract, and egg, mixing until well combined and smooth.

Fill the Crusts
Pour the cheesecake filling into each mini graham cracker crust, filling them to the top.

Place the filled crusts in the preheated oven and bake for about 20 minutes or until the center is set.

Remove from the oven and let cool to room temperature. Then, chill in the refrigerator for at least 2 hours before serving.
