Method

Preparing the Mussels

    Clean the Mussels

    Rinse the fresh mussels under cold water, scrubbing the shells with a brush to remove any dirt or debris. Remove beards if present.

    Sauté Garlic

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic (4 cloves) and sauté for about 1-2 minutes, or until fragrant.

    Add Tomatoes and Wine

    Pour in the canned diced tomatoes (with liquid) and Chardonnay wine. Stir to combine and bring to a simmer.

    Add Mussels

    Add the cleaned mussels to the pot, cover with a lid, and let steam for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

    Finish the Broth

    Stir in the fresh basil and parsley, season with salt and black pepper. Cook for an additional 2 minutes to allow the flavors to meld.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Bread

    Slice the homeloaf bread into wedges. In a small bowl, mix together softened butter and garlic powder.

    Butter the Bread

    Spread the garlic butter mixture generously over each wedge of bread.

    Grill the Bread

    Place the wedges on a baking sheet and bake in the preheated oven for about 10-12 minutes, or until golden and crispy.

    Garnish

    Remove from the oven and sprinkle with fresh parsley before serving.
