Salad Preparation

Prepare the Vegetables
Wash all fresh vegetables under cold running water. Pat dry with paper towels.

Chop the Romaine Lettuce
Remove the core from the Romaine lettuce and chop the leaves into bite-sized pieces. Place in a large salad bowl.

Halve the Cherry Tomatoes
Cut the cherry tomatoes in half and add them to the salad bowl.

Slice the Cucumber
Peel the cucumber if desired, then slice it into thin rounds. Add to the salad bowl.

Chop the Red Bell Pepper
Remove the seeds and stem from the red bell pepper, then chop it into small pieces. Add to the salad bowl.

Grate the Carrots
Peel the carrots and grate them using a box grater or food processor. Add to the salad bowl.

Slice the Red Onion
Thinly slice the red onion and add it to the salad bowl along with the olives and feta cheese.
Dressing Preparation

Combine Dressing Ingredients
In a small bowl or jar, combine olive oil, red wine vinegar, Dijon mustard, minced garlic clove, honey, salt, and black pepper.

Whisk or Shake
Whisk the ingredients together until emulsified, or seal the jar and shake vigorously until mixed.

Taste and Adjust Seasoning
Taste the dressing and adjust the seasoning by adding more salt or pepper if needed.
Assembly

Combine Salad and Dressing
Drizzle the prepared dressing over the salad in the bowl. Toss gently to coat all the ingredients evenly.

Serve
Serve the large garden salad immediately or refrigerate for a short time before serving. Enjoy!
