Broth

Meatballs

Method

Preparing the Broth

  1. 1

    Sauté Vegetables

In a large pot, add the diced onion, carrots, and celery. Sauté over medium heat for about 5 minutes or until the vegetables are softened.

  2. 2

    Add Garlic and Seasonings

Add minced garlic, Italian seasoning, salt, and black pepper to the pot. Cook for an additional minute until fragrant.

  3. 3

    Pour in Chicken Broth

Pour in the chicken broth and bring it to a boil. Reduce heat and let it simmer while you prepare the meatballs.

Making the Meatballs

  1. 4

    Combine Ingredients

In a mixing bowl, combine ground beef, ground pork, bread crumbs, grated Parmesan cheese, egg, chopped parsley, and garlic powder. Mix until well combined.

  2. 5

    Shape Meatballs

Form the mixture into small meatballs, about 1 inch in diameter.

  3. 6

    Cook Meatballs

Add the meatballs to the simmering broth and cook for about 10 minutes, or until they are cooked through.

Finishing the Soup

  1. 7

    Add Pasta

Stir in the confetti pasta into the pot and cook for about 6-8 minutes, or until al dente.

  2. 8

    Incorporate Spinach

Add the chopped spinach to the soup and cook for an additional 2 minutes until wilted.

  3. 9

    Serve

Taste the soup and adjust seasoning if needed. Serve hot in bowls and enjoy!
