Method

Cake

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  3. 3

    Cream Butter and Sugar

In another bowl, cream the softened unsalted butter until light and fluffy using a hand mixer or stand mixer. Gradually add the sugar mixture until combined.

  4. 4

    Add Eggs and Wet Ingredients

Add the eggs one at a time, mixing well after each addition. Then, add the milk and vanilla extract, mixing until just combined.

  5. 5

    Combine Wet and Dry Mixtures

Gradually add the dry ingredients to the wet ingredients, stirring gently until no flour streaks remain. Fold in the rainbow sprinkles.

  6. 6

    Bake the Cake

Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

  7. 7

    Cool the Cake

Once baked, remove from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Vanilla Buttercream

  1. 8

    Prepare the Buttercream

In a medium bowl, beat the softened unsalted butter until creamy. Gradually add the powdered sugar, mixing on low speed until combined.

  2. 9

    Add Cream and Vanilla

Add the heavy cream and vanilla extract, then beat on high speed for 2-3 minutes until the buttercream is light and fluffy.

Whipped Cream

  1. 10

    Make Whipped Cream

In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip on medium-high speed until soft peaks form.

Assembly

  1. 11

    Assemble the Cake

Once the cake is completely cool, spread a layer of vanilla buttercream evenly over the surface. Roll the cake tightly from one end to the other, then frost the outside with more buttercream.

  2. 12

    Serve

Slice the cake and serve with a dollop of whipped cream and a sprinkle of rainbow sprinkles on top.
