Preparing the Fish

    Make the Batter

    In a bowl, combine all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth and well combined.

    Heat the Oil

    In a deep frying pan or a large pot, heat vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

    Batter the Fish

    Dip each haddock fillet into the batter, allowing any excess to drip off.

    Fry the Fish

    Carefully place the battered fillets in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Peel and cut the potatoes into thick strips (fries).

    In a bowl, mix together mayonnaise, finely chopped dill pickles, capers, lemon juice, and Dijon mustard until well combined.
