    Cook the Bacon

    In a large pot over medium heat, cook the bacon until crispy. Remove the bacon from the pot and place on a paper towel to drain. Leave the bacon fat in the pot.

    Sauté the Vegetables

    In the same pot with the bacon fat, add diced onion, minced garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Prepare the Potatoes

    Peel and cube the potatoes. Add the cubed potatoes to the pot with the sautéed vegetables.

Cooking

    Simmer the Soup

    Pour in the chicken broth, and add salt, black pepper, thyme, and the bay leaf. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes or until the potatoes are tender.

    Blend the Soup

    After the potatoes are tender, remove the bay leaf and use an immersion blender to blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.

    Add Cream and Bacon

    Stir in the heavy cream and crumble the cooked bacon into the soup. Heat through for another 5 minutes without boiling.
