Chicken Scallopini Preparation

Prepare Chicken
Pound the chicken breasts to an even thickness, about 1/2 inch thick. This helps them cook evenly.

Bread the Chicken
Set up a breading station with three bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, dip in egg, and coat with breadcrumbs.

Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Fry the breaded chicken until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.

Make the Sauce
Add the crushed tomatoes, oregano, basil, salt, and pepper to the saucepan. Stir and let simmer for 20 minutes, stirring occasionally.

Toast the Baguette
Preheat the oven to 375°F (190°C). Slice the baguette in half lengthwise and toast in the oven for about 5 minutes until lightly crispy.

Assemble the Sandwich
Layer each half of the toasted baguette with a piece of fried chicken, followed by a generous spoonful of tomato sauce, and top with provolone cheese. Place back in the oven for 5-7 minutes until the cheese melts.

Top with fresh basil leaves and close the sandwich. Cut in half and serve warm.
