Tomato and Pesto Aioli
Method
Preparing the Calamari

Clean the Calamari
Rinse the fresh calamari rings under cold water and pat them dry with paper towels.

Prepare the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika.

Coat the Calamari
Add the calamari rings to the flour mixture and toss to ensure they are evenly coated.

Heat the Oil
In a deep saucepan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari in batches to the hot oil, frying for 2-3 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.
Making the Aioli

Combine Ingredients
In a medium bowl, mix together the mayonnaise, tomato sauce, pesto sauce, lemon juice, and minced garlic.

Season the Aioli
Add salt and black pepper to taste, adjusting as desired.

Chill
Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
