Preparation Steps

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Sauté Spinach and Onion

    In a skillet, heat olive oil over medium heat. Add chopped red onion and sauté until translucent, about 3-4 minutes. Add fresh spinach and cook until wilted. Season with salt and black pepper. Remove from heat.

    Mix Filling

    In a bowl, combine the sautéed spinach and onion mixture with crumbled goat cheese, lemon zest, and lemon juice. Stir until well blended.

    Prepare Puff Pastry

    Roll out the puff pastry sheets on a floured surface. Cut each sheet into 4 squares.

    Fill and Fold

    Place a spoonful of the spinach and goat cheese mixture in the center of each square. Fold the corners to the center and pinch to seal.

    Egg Wash

    Beat the egg and brush it over the top of each Danish for a golden finish.

    Place the filled pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until golden brown.
