Directions for Grilled Bavette Steak Frites

1. Prepare the Steak

Season the bavette steak with salt and black pepper on both sides. Allow it to rest at room temperature for 30 minutes.

2. Make Herb & Shallot Butter

In a small saucepan, melt the unsalted butter over medium heat. Add the finely chopped shallots, parsley, and thyme. Cook until shallots are soft and fragrant, about 3-4 minutes. Remove from heat and set aside.

3. Cook the Fries

Heat the vegetable oil in a deep fryer or large pot to 180°C (350°F). Fry the cut potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Drain on paper towels and season with salt.

4. Grill the Steak

Preheat a grill or grill pan over high heat. Brush the grill with olive oil. Grill the steak for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes.

5. Serve

Slice the steak against the grain and place on a plate. Top with the herb & shallot butter and serve with the crispy fries, watercress, and a side of aioli.
