Method

Prepare the Spread

    Blend the Spread

    In a food processor, combine sundried tomatoes, toasted almonds, minced garlic, olive oil, salt, black pepper, and lemon juice. Pulse until smooth. Adjust seasoning to taste.

Marinate the Eggplant

    Marinate

    In a bowl, combine sliced eggplant, olive oil, balsamic vinegar, sliced garlic, chopped basil, salt, and black pepper. Toss to coat and let marinate for at least 30 minutes.

Prepare the Crostini

    Toast the Focaccia

    Preheat oven to 400°F (200°C). Slice focaccia into small pieces and arrange on a baking sheet. Drizzle with olive oil and sprinkle with salt. Bake for 10-12 minutes or until golden and crispy.

Assemble the Dish

    Spread the sundried tomato and almond mixture on toasted focaccia crostini. Top with marinated eggplant and a piece of burrata cheese. Garnish with fresh basil leaves and serve immediately.
