Roasting the Chicken
Preheat your oven to 400°F (200°C). Season the chicken breasts with olive oil, salt, black pepper, garlic powder, and thyme. Place the chicken on a baking sheet and roast in the oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

Cooking the Haricots Verts
In a pot of boiling salted water, blanch the haricots verts for 3-5 minutes until tender-crisp. Drain and immediately plunge into ice water to stop the cooking process. Drain again and set aside.

Making the Dijon Jus
In a small saucepan, combine chicken broth and Dijon mustard. Bring to a simmer over medium heat, stirring until well combined. Cook for 5 minutes, then remove from heat.

Plating the Dish
Once the chicken is done, let it rest for a few minutes before slicing. Serve the sliced chicken breast over a bed of whipped potatoes, with haricots verts on the side. Drizzle the Dijon jus over the chicken and garnish with fresh parsley.
