    Prepare the Shallots

    Thinly slice the shallots and place them in a bowl. Add red wine vinegar and a pinch of sea salt. Let them pickle for at least 30 minutes.

    Roast the Bones

    Preheat your oven to 450°F (232°C). Place the beef marrow bones on a baking sheet, cut side up. Drizzle with olive oil and sprinkle with sea salt. Roast in the oven for 20-25 minutes until the marrow is soft and bubbly.

    Prepare the Parsley Salad

    While the bones are roasting, finely chop the parsley and combine it in a bowl. Drizzle with olive oil and add a pinch of sea salt, mixing well.

    Serve

    Once the marrow bones are done, remove them from the oven. Serve hot with pickled shallots and parsley salad on the side, along with the beef jus for dipping.
