    Prepare the Base

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

    Add Tomatoes and Stock

    Stir in the diced tomatoes and cook for another 5 minutes. Pour in the fish stock and bring to a simmer.

    Incorporate Saffron

    Add the saffron threads and salt to the pot. Stir to combine and let it simmer for 10 minutes.

    Add Seafood

    Gently add the monkfish, clams, mussels, and head-on shrimp to the pot. Cover and cook for about 8-10 minutes, or until the seafood is cooked through and the clams and mussels have opened.

    Season and Serve

    Taste and adjust seasoning with black pepper and additional salt as needed. Serve hot, garnished with chopped parsley and accompanied by slices of sourdough bread.
